All Things Cream Cheese

Cream cheese. Need I say more? I swear I could just just sit down with a block of the stuff and a fork and go to town. Anyway, let’s move on.

I just want to share some of my favorite ways to incorporate cream cheese into my cooking that are really simple, and real crowd pleasers.

One of my all time favorite recipes is a delicious dip that is full of flavor and only has two ingredients. I’ve gotten many compliments, so it has to be good. Or everyone is just being really nice.

All you do is mix one can of your favorite canned chili, and one block of cream cheese in a saucepan on the stove until the cream cheese is melted. Serve with tortilla chips and try not to eat it all by yourself!

Another wonderful dip is just as simple and just as delicious. I first heard of this from my husband’s cousin’s wife. Did you get that? She just mixes a block of cream cheese with a jar of your favorite salsa, and voila! You have what she calls Pink Dip. Also serve this one with tortilla chips.

Sticking to the theme of dips, my mom makes a wonderful dip every year for Christmas Eve. You just brown a pound of breakfast sausage in a large skillet, drain the fat, then melt in a block of cream cheese. Once the cream cheese is melted, mix in a can of diced tomatoes and green chiles. Serve with a chip or cracker of your choice. So good!

This next way of using cream cheese is something I just tried for my very first Christmas meal to make by myself. I made about 5 lbs of mashed potatoes and mixed in a whole stick of butter, and a whole block of cream cheese. It was deliciously creamy. So much so that I didn’t even have to use any milk. Give it a try. You won’t be disappointed.

Last, but not least, My husband told me about this last heavenly cream cheese mixture. He was deployed in Iraq for a year, and while he was there he bought breakfast every morning from an Iraqi man that had set up a little food stand on their base. One of my husband’s favorite things to buy from him was scrambled eggs mixed with cream cheese inside of bread called samoon. I haven’t been able to find this bread in any store, or even find a good recipe for it, so I just eat it on top of toast, or wrapped in a fresh tortilla. Pita bread or naan would be very good as well. Just mix in some chopped up green onions, and really send this recipe over the top!

Whew. Talking about all of this wonderful, heavenly cream cheese is making me hungry. Hopefully you’ll give these simple ideas a try and enjoy them just as much as I do!
